Proper Piggy Burger

The Proper Piggy Burger is somewhat of a mess on, but trust me it’s totally worth it. This is hands down the best burger I have made at home and will certainly be making them again soon.
WHEN YOU MIX THE PORK, SAGE AND OTHER SEASONING YOU’LL BE HIT WITH THE SMELL OF CHRISTMAS STUFFING AND YOU’LL WANT TO EAT IT RIGHT THERE AND THEN…BUT FOR THE LOVE OF GOD FINISH COOKING IT!

Ingredients

  • 500 g Lean pork mince
  • 12 rashers of smoked bacon
  • Cheddar cheese slices
  • Black pudding
  • 1 egg
  • 4 soft white buns
  • Seasoning: Pepper, onion salt, sage and garlic

Instructions

  • Pour the pepper, onion salt, sage (lots of sage!) and garlic over the pork mince and mix lightly and cover for 20 minutes

  • While the mice is covered cook of the 12 bacon rashers until soft (Not crispy!) and four slices of black pudding. Dry with kitchen roll and set to one side

  • Either with your hands (Or thoroughly with a fork) mix the mince with one whisked egg until it's a doe like texture

  • Use half of the mix to form four burger patties using the palm of your hands. Place a piece of black pudding in the centre of each patty

  • Use the remaining mince to make four more patties and seal the two together with the black pudding centre. (Thoroughly nip the sides to stop them separating while cooking)

  • Add the burgers to a pan on a medium heat and cook for around 8 minutes on each side (The inside centre should be brown)

  • Remove the burgers from the hob and wrap in the bacon slices and cook for a further 5 minutes (Put a weight on top to sear bacon parcels)

  • Place a cheese slice over each burger and cover with a glass bowl (Or anything else that fits!)

  • When the cheese is melted remove from pan and place in the patties inside a bun and enjoy!
